    S'mores Rice Krispie Treats

    These s'mores rice krispie treats are a fun twist on classic rice krispie treats. They're loaded with all of the best s'mores flavors, including graham crackers, chocolate, and extra mini marshmallows. This is a perfect no bake treat to make during the summertime, as it only takes 15 minutes to prep and requires just 5 ingredients.

    These s'mores bars uses Rice Krispies cereal to create a campfire treat without the hassle of an open flame. They're filled with ooey gooey marshmallows, crushed graham crackers, and semi-sweet chocolate.

    I am a lover of s'mores desserts, which is why I also have these s'mores cupcakes which are always a favorite 4th of July dessert and also these double chocolate s'mores cookies!

    And as a busy home baker and mom of 2, rice krispie treats are always a quick and easy no bake dessert that the whole family will enjoy (like these homemade strawberry rice krispie treats)!

    Why You'll Love These Cereal Treats

    • They are a no bake dessert. Whether it's too hot to turn on your oven during the summertime or you have no room in your kitchen during the holidays, cereal bar treats are a perfect choice!
    • Classic s'mores flavors. I used my s'mores chocolate chip cookies as a flavor reference for these bars, so they are loaded with graham cracker chunks, chocolate chunks, and of course, marshmallows.
    • Requires just 5 ingredients. Although I like to be extra and add a little bit of vanilla extract and salt to my rice krispie treats, you really only need 5 simple ingredients in order to make these.
    • A fun summer dessert recipe. Not only are these perfect to make all summer long, I really enjoy making them for Independence Day and family BBQs.
    • Gooey marshmallow texture. Along with the melted marshmallows, an additional 1 ½ cups of mini marshmallows are mixed into the cereal mixture, so each bit has that ooey gooey texture.

    Ingredients For S'mores Rice Krispie Treats Recipe

    Ingredients needed: rice cereal, mini marchmallows, salt, chocolate chunks, butter, vanilla extract, and graham crackers
    • Marshmallows: Use mini marshmallows, not the large ones. You'll need two 10-ounce bags.
    • Rice Cereal: Feel free to use either the name brand of Rice Krispies or a generic brand. The only difference I have found is the generic brand doesn't stay as crunchy long, but the flavor is exactly the same.
    • Graham Crackers: I used honey graham crackers, but you could also use the chocolate ones. Be sure to break them into chunks, not crumbs.
    • Chocolate: I used semi-sweet chocolate chunks, but you could also use chocolate chips.

    How To Make The Best S'mores Rice Krispie Treats

    Step 1: In a large saucepan over medium heat, melt the butter.

    Once melted, add 5 cups of the mini marshmallows (or one 10-ounce bag) and stir occasionally until completely melted.

    Step 2: Remove the pan from the heat and mix in the vanilla extract and salt (if using).

    Then gently mix in the rice cereal and graham cracker pieces until evenly coated.

    Step 3: Then gently mix in the chocolate chunks and the remaining marshmallows.

    Step 4: Spoon the mixture into the prepared pan and use a piece of parchment paper that's been sprayed with cooking spray to press it down into an even layer.

    Karissa's Baking Tip. Add extra chocolate chunks and marshmallows to the top of the bars as they cool down and before slicing into bars.

    Storing & Freezing

    Although these bars are best consumed within 1-2 days, they will last up to 3 days in an airtight container at room temperature.

    If needed, you could also wrap each bar individually in plastic wrap or aluminum foil and keep them on the counter.

    Freezing: I have never frozen rice krispie treats before, so I'm not sure how they would turn out.

    Professional Home Baking Tips

    • Baking Pan: Line your 9x13-inch baking pan with parchment paper and then non-stick spray.
    • Chocolate: I used chocolate chunks but you could also use chocolate chips or a chocolate bar broken up into pieces (such as Hershey's bars).
    • Parchment Paper: Use a piece of parchment paper lightly sprayed with non-stick spray to evenly press down the rice krispies into the prepared baking dish.
    • Plastic Knife: You want to know the best way to cut rice krispie treats? Use a plastic knife! It's safe to use in your baking pan without scratching it, plus it doesn't stick to the sticky treats.

    Can I Make S'mores Rice Krispies With A Different Cereal?

    Although I haven't tried, you could probably swap out the rice krispie cereal with either golden grahams cereal or even cocoa krispies.

    Can I Make Rice Krispie Treats Ahead Of Time?

    You certainly can, but just note that they might not be as crunchy the next day.

    What's The Best Chocolate To Use For S'mores?

    You can use any chocolate you like! I personally love dark chocolate or semi sweet, so those are my top two choices. You could also use milk chocolate or even white chocolate bars or chips.

    Why Are My Rice Krispie Treats Hard?

    This can happen if you use stale marshmallows (be sure to check the expiration date), you add too much cereal to the melted marshmallow mixture, or you press the mixture down too hard in the prepared pan.

    • 9x13 inch baking pan
    • Large Sauce Pan

    Ingredients:
     
     

    • 3 tablespoons unsalted butter
    • 6 ½ cups mini marshmallows, divided
    • ½ teaspoon vanilla extract (optional)
    • ⅛ teaspoon salt (optional)
    • 5 ½ cups Rice Krispie cereal
    • 4 graham cracker sheets, crushed into chunks
    • ¾ cups chocolate chunks

    Instructions:
     

    • Line a 9x13-inch baking pan with parchment paper and then non-stick spray. Set aside.
    • In a large sauce pan over medium heat, melt the butter. Once melted, add 5 cups of the mini marshmallows (which is one 10-ounce bag) and stir occasionally until completely melted.
    • Remove the pan from the heat and add the vanilla extract and salt, mixing until combined (if using). Then, gently mix in the rice krispie cereal and crushed graham crackers until fully combined.
    • Then mix in the chocolate chunks and the remaining marshmallows (1 ½ cups).
    • Spoon the mixture into the prepared pan and use a piece of parchment paper that's been sprayed with non-stick spray to press it down into an even layer. Top with extra mini marshmallows and chocolate chunks (optional).
    • Allow the bars to cool for at least 20 minutes before slicing them into bars. Keep any leftover bars in an airtight container on the counter for up to 3 days.
