These s'mores rice krispie treats are a fun twist on classic rice krispie treats. They're loaded with all of the best s'mores flavors, including graham crackers, chocolate, and extra mini marshmallows. This is a perfect no bake treat to make during the summertime, as it only takes 15 minutes to prep and requires just 5 ingredients.

These s'mores bars uses Rice Krispies cereal to create a campfire treat without the hassle of an open flame. They're filled with ooey gooey marshmallows, crushed graham crackers, and semi-sweet chocolate.

- Requires just 5 ingredients. Although I like to be extra and add a little bit of vanilla extract and salt to my rice krispie treats, you really only need 5 simple ingredients in order to make these.

Ingredients For S'mores Rice Krispie Treats Recipe

- Marshmallows: Use mini marshmallows, not the large ones. You'll need two 10-ounce bags.
- Rice Cereal: Feel free to use either the name brand of Rice Krispies or a generic brand. The only difference I have found is the generic brand doesn't stay as crunchy long, but the flavor is exactly the same.
- Graham Crackers: I used honey graham crackers, but you could also use the chocolate ones. Be sure to break them into chunks, not crumbs.
- Chocolate: I used semi-sweet chocolate chunks, but you could also use chocolate chips.

How To Make The Best S'mores Rice Krispie Treats

Step 1: In a large saucepan over medium heat, melt the butter.
Once melted, add 5 cups of the mini marshmallows (or one 10-ounce bag) and stir occasionally until completely melted.

Step 2: Remove the pan from the heat and mix in the vanilla extract and salt (if using).
Then gently mix in the rice cereal and graham cracker pieces until evenly coated.

Step 3: Then gently mix in the chocolate chunks and the remaining marshmallows.

Step 4: Spoon the mixture into the prepared pan and use a piece of parchment paper that's been sprayed with cooking spray to press it down into an even layer.
Karissa's Baking Tip. Add extra chocolate chunks and marshmallows to the top of the bars as they cool down and before slicing into bars.
Storing & Freezing
Although these bars are best consumed within 1-2 days, they will last up to 3 days in an airtight container at room temperature.
If needed, you could also wrap each bar individually in plastic wrap or aluminum foil and keep them on the counter.
Freezing: I have never frozen rice krispie treats before, so I'm not sure how they would turn out.

Recipe FAQs
Although I haven't tried, you could probably swap out the rice krispie cereal with either golden grahams cereal or even cocoa krispies.
You certainly can, but just note that they might not be as crunchy the next day.
You can use any chocolate you like! I personally love dark chocolate or semi sweet, so those are my top two choices. You could also use milk chocolate or even white chocolate bars or chips.
This can happen if you use stale marshmallows (be sure to check the expiration date), you add too much cereal to the melted marshmallow mixture, or you press the mixture down too hard in the prepared pan.

- 6 ½ cups mini marshmallows, divided
