These mini apple pies with puff pastry are so easy to make using a muffin pan and puff pastry dough. Compared to a traditional apple pie recipe, these mini pies take just about an hour to make from start to finish and are the perfect addition to your Thanksgiving table.

A hand holding an apple pie that has a bite. You can see the ooey gooey apple center.

These mini apple pies taste just like a classic apple pie, but in mini form. I used puff pastry sheets for the pie dough and made my own homemade apple pie filling.

Each bite is filled with flaky puff pastry and that warm apple mixture in the middle. These would be perfect to serve at Thanksgiving or Christmas dinner!

I also have these easy apple pie bars and mini caramel apple cheesecakes.

    Why You'll Love This Pie

    • Easy apple pie filling. Making a quick and simple homemade apple pie filling is worth it. It's filled with juicy apples, my apple pie spice mix, and plenty of cinnamon.
    • No fancy equipment needed. Because this pie recipe is made in a muffin tin, you don't have to worry about having a pie dish.
    • Simple to share. This recipe makes 9 individual pies, making it easy to share. I also have these mini pumpkin hand pies.
    • Quick to make. If you're in a hurry, these pies take just about 1 hour to make. Plus, since they're mini, they take just 15 minutes to cool before serving.

As both a mom and baker, I love easy and simple dessert recipes, especially if they take less than one hour to make.

That's why mini pies are a great option. I also have these mini s'mores pies and mini peach pies you might be interested in too!

    Ingredients For Mini Apple Pies

Ingredients needed: apples, puff pastry, sugar, butter, apple spice, cinnamon, flour, water, and vanilla.
    • Puff Pastry: I used store-bought puff pastry that I found in the freezer aisle at my local grocery store.
    • Apples: I used honerycrisp apples, but you can definitely use any type you like, including gala apples and granny smith apples.
    • Flour: This helps to thicken the filling while the apples are cooking.
    • Apple Pie Spice: You can buy this from the store or make your own. Here is my apple pie spice recipe that I highly recommend!

See the recipe card for the full ingredients list and the exact amounts.

How To Make Mini Apple Pies In A Muffin Pan

Apple pie filling in a saucepan.

Step 1: In a medium saucepan over medium heat, combine the diced apples, white sugar, butter, flour, water, apple pie spice, cinnamon, and vanilla extract.

Stir occasionally as the apple mixture starts to thicken. Cook for a total of 10 minutes. Remove from the heat and set aside.

Puff pastry dough with round cuts.

Step 2: On a lightly floured surface, use a circle cookie cutter to cut a total of 18 circles between the two puff pastry sheets.

Place 9 of the circles into the prepared muffin pan.

Step 3: Fill each puff pastry cup with 1 heaping tablespoon of the apple pie filling.

Lattice top crust design on top of mini pies.

Step 4: With the other 9 pie circles, use a pizza cutter to cut them into strips. Then proceed to create a lattice/basket weave design on top.

Step 5: Bake the puff pastry pies for 15-20 minutes, or until golden brown and puffed up on top.

    Storing Tips

Keep any leftover pies in an airtight container in the refrigerator for up to 4 days.

These can sit out at room temperature for 24 hours before needing to be refrigerated.

    Karissa's Home Baking Tips

    • Puff Pastry: Follow the directions on the box to properly thaw the dough.
    • Muffin Pan: Spray each muffin cup generously with nonstick spray. If you don't, the puff pastry might stick to the pan.
    • Cookie Cutter: Use a 4-inch round cookie cutter to cut out both the top and bottom crust. You'll need a total of 18 circles.
    • Apple Filling: You'll want to cook the apple filling on the stovetop for about 10 minutes. This will help to soften the apples a little before baking in the oven to cook through completely.
    • Top Crust: I made a simple lattice crust design on top of each pie, but you could also just lay it on top, seal the corners, and cut two air holes.

    Recipe FAQs

How Do You Keep Puff Pastry From Sticking To Muffin Tins?

You have to generously grease each muffin cup you're using with nonstick spray. If you don't, it will be quite hard to remove the pies.

What Are The Best Apples For Pie?

I love using honeycrisp apples, but also using two types of apples will add an extra layer of flavor and texture.

    Equipment

    • 12-count muffin pan
    • Saucepan
    • Round Cookie Cutter

    Ingredients:

    • 1 box puff pastry
    • 3 medium-sized apples, peeled, cored, and diced into ¼ inch squares
    • ⅓ cup sugar
    • 1 tablespoon unsalted butter
    • 1 tablespoon all-purpose flour
    • 1 tablespoon water
    • 1 teaspoon apple pie spice
    • ½ teaspoon ground cinnamon
    • ½ teaspoon vanilla extract

    Instructions:

    • Follow the instructions on the back of the puff pastry box to thaw the dough before using.
    • In a medium saucepan over medium heat, mix together the diced apples, sugar, butter, flour, water, apple pie spice, cinnamon, and vanilla extract until combined. Stir occasionally as the apple mixture starts to thicken. Cook for a total of 10 minutes. The apples should be a little soft but not all the way cooked. Remove from the heat and set aside.

    Assemble

    • Preheat the oven to 400 degrees and take a 12-count muffin pan and spray 9 of the muffin cups with non-stick spray. Set aside.
    • On a lightly floured surface, slightly roll out each puff pastry sheet (you should have 2). Use your circle cookie cutter to cut out 9 circles on each sheet. Place 9 of the cut out dough circles into the muffin pan and fill each one with a heaping tablespoon of the apple pie filling.
    • With the other 9 pie circles, use a pizza cutter to cut them into strips. Then proceed to create a lattice/basket weave design on top.
    • Bake the puff pastry pies for 15-20 minutes, or until golden brown and puffed up on top. Cool for 15 minutes before serving with whipped cream or ice cream.
    • Keep any leftover mini pies in an airtight container in the refrigerator for up to 4 days.
