These Rolo stuffed cookies not only have bits of Rolo pieces mixed straight into the dough, but also includes a whole Rolo candy stuffed right into the middle. The results? Rich and soft caramel oozing out from the center of these delicious cookies!
Preheat the oven to 350 degrees and line two baking sheets with parchment paper. Set aside.
In a microwaveable-safe bowl, melt the butter and let it cool on the counter for at least 5 minutes (do not skip this step!).
In a medium-sized bowl, whisk together the flour, corn starch, baking soda, and salt. Set aside.
In a large bowl, whisk together the melted and cooled butter, brown sugar, sugar, eggs, and vanilla extract until fully combined.
Add the flour mixture and fold together just until combined (be careful not to overmix!). Then fold in the Rolo pieces (the 8 that you cut into fours).
Use a medium cookie scoop (I used my #24, which is 2.7 tablespoons) to scoop out the cookie dough. Use your thumb to press into the dough and place a whole Rolo into it. Take the cookie dough ball out and gently use your hands to form around the Rolo (keep the Rolo on top).
Place 8 cookie dough balls onto the prepared baking sheet and bake for 10-13 minutes. Allow the cookies to rest on the baking sheet for at least 10 minutes before you transfer them over to a wire baking rack to finish cooling. *The cookies will spread a bit, so use a round cookie cutter to gently rotate around the cookies immediately after baking to get that perfect cookie shape.
Store any leftover cookies in an airtight container on the counter for up to 5 days.
