Equipment

  • 9x13 inch baking pan
  • Large Pot
  • Silicone Spatula

Ingredients:

  • 5 tablespoons unsalted butter
  • 5 ½ cups mini marshmallows
  • 6 cups Lucky Charms cereal

Instructions:

  • Grease a 9x13 inch pan (or two 8x8 inch pans) with non-stick spray. Set aside.
  • In a large pot, melt the butter over medium-low heat. Once melted, add the mini marshmallows. Stir occasionally until melted.
  • Remove the pot from the heat and gently mix in the cereal with a silicone spatula or wooden spoon until well combined.
  • Spread the mixture into the greased pan and use parchment (or wax) paper to press down the Lucky Charms (see note below). Allow the bars to cool on the counter for 10-15 minutes before cutting them into squares.
  • Keep any leftover bars on the counter for up to 3 days.

Notes:

Baking Pan: Grease a 9x13-inch baking pan with non-stick spray. You could also use two 8x8-inch baking pans.
Melting Marshmallows: It's important to occasionally stir your marshmallows until melted to aviod burning.
Parchment Paper: Use a piece of parchment paper lightly sprayed with non-stick spray to evenly press down the cereal mixture into the prepared baking dish.
